Have you ever looked at the back of a store bought jar of nut butter? Full of added sugars, added oil and other things you don’t really war nor need in a jar of nut butter. And I mean those standard ones. Because you can find pretty decent ones in an organic store. Only thing is: they can be really expensive.
So why not just go and make your own? If you follow some easy rules it can be a easy thing. You just need a food processor. So far I’ve made my own nut butter using pecan nuts, peanuts, cashews and almonds. If you are allergic to nuts you can try this recipe while using sunflower seeds. Works just perfectly! 🙂
For one jar you’ll need 300g nuts. I’ve used cashews for this tutorial.
A pinch of salt – optional.
That’s it! So let’s just get to it.
Preheat your oven to 180°C / 350°F. Take a baking tray and add all the nuts. Nothing more. Roast them for about 8 minutes (varies – depends on your oven). Take a big spoon and give them a stir. So that every side gets roasted and give them a few more minutes until they’ve reached a nice golden brown color. Roasting them is an elementary step because the nuts will release some oil, therefore we won’t need to add extra oil while processing them.
Now these nuts need to cool down. This is IMPORTANT because only cool nuts will get you a smooth texture. Warm nuts only will form lumps. Trust me, I’ve tested this not only once. 😅
You can also make that previous step in the evening and proceed the next day. That will work just fine.
Once the nuts are cold, put them into your food processor. You can add a pinch of salt if you want to.
I have a Thermomix (not sponsored) and I always put it on a maximum speed. If you are careful with this step you can actually hear the noise the food processor makes. After all the oil gets released from the nuts, the mass will turn thicker and the sound will change. That’s the point where you slow down the speed a little bit. The mass will get thicker again and you’ll need to reduce the speed after approximately a minute. Repeat until you’ve a smooth texture. I usually need 3-5 minutes for that. If you want your nut butter really smooth, you can just put it on a low speed for 20 minutes. Depends on how you like it.
